Popular Post AwesomeAidan0221 699 Posted May 1, 2020 Popular Post Share Posted May 1, 2020 Hello Everybody, this may seem weird but i wanted to share what i spent 5 hours doing in the past 2 days. One of my school classes is a culinary arts class which i extremely enjoy. We were assigned to make a dish and then write up a report about it after. Since i do not wish to type up a whole other "report" about what i had made, i decided to just copy and paste my report into here. The format may look familiar as i decided to base the format off of shrimps suggestion "Spring Cleaning" as a bit of a meme. Even the title of this thread is a play on his suggestion lol. 1.1 The Plan 1.1.1 The Dish I am going to be creating a burger with two side dishes. The first side dish is going to be a summer panzanella salad, the second side dish will be oven roasted cheesy garlic asparagus 1.2.1 The Burger The burger will include homemade brioche buns, a smashed patty, a homemade sauce, american cheese, shredded lettuce and bacon. 1.2.1.1 The Buns These brioche buns have been made the night before, they include the following ingredients. Eggs Butter Flower Yeast Sugar Milk Water Salt I first added the yeast to a mixture of warm milk and sugar and let the yeast activate While the yeast was activating I mixed the dry ingredients together(flour, sugar, and salt). I then mixed the yeast and dry ingredients together, added 4 eggs and mixed more, then added the butter. After everything was well mixed, I let it proof in the oven for 45 minutes. After done proofing, I split up the dough into 8 equal parts and let it proof for another 15 minutes. After proofing I spread an egg wash over each bun with a pastry brush and then baked them for 45 minutes until they got a golden brown top. When making the burgers, i also toasted the buns on a saute pan Below is a photo of the buns after cooking 1.2.1.2 The Sauce The “homemade sauce” will consist of mayo, ketchup, garlic powder, onion powder, and relish. This sauce is not only good for burgers, but can be used on a lot of other sandwiches if you have extra sauce after. Below is a picture of the sauce 1.2.1.3 The Patty I am going to be making a smash burger patty. To do this, I need to form a “meatball” and season it with salt and pepper. The moment I put the meatball on the cast iron pan, I need to push down onto it to “smash” the patty and form a “smash burger”. Once one side is a deep brown color, I will flip the patty and put the cheese on. Below is a picture of the patty cooking. 1.2.1.4The Bacon I am just going to put some bacon in the oven at 425 and cook until golden brown(flip half way through) 1.2.1.5 The Lettuce The lettuce will be cut into thin strips which are great for burgers 1.3.1 The Summer Panzenella The panzanella salad will include the ingredients listed below Croutons Olive Oil Red Wine Vinegar Honey Salt Black Pepper Cucumber Cherry Tomatoes Red Onion Garlic Basil 1.3.1.1 The Prep Work I will saute the croutons in a medium size pan with olive oil until they are warmed up and golden brown. I mixed the wet ingredients in a small bowl. I cut the cherry tomatoes in half and cut the cucumbers into ½ inch slices. The onion was sliced, the garlic was minced and I pulled apart the basil into strips. Below is a picture of all the prep work and you can see the cuts of the vegetables. I also decided to saute the onions 1.3.1.2 Finished Product Once the prep work is done, all I need to do is mix everything together and garnish it with the basil. Below is a picture of everything mixed together. 1.4.1 The Cheesy Garlic Asparagus This is a pretty simple yet savory dish. It includes the following ingredients Asparagus Mozzarella cheese Garlic Olive Oil I minced the garlic then combined it with a small amount of olive oil. I then cut off the ends of the asparagus and put it in a baking sheet. Cover the asparagus in the olive oil and garlic then mix well into the asparagus. Put the asparagus in the oven at 425 for 15 minutes. Take the asparagus out then add the mozzarella cheese on top of it and put back in the oven until the cheese is melted. Below are pictures through the process. 1.5.1 Finished After almost 5 hours of work, I finished the dish. The burger let me test out some of my baking skills while making the buns and they turned out better than I could have asked for. The summer panzanella helped me test out a lot of my knife skills and my ability to mise en place. The asparagus was extremely rich and tied in the acidic panzennal and the savory burger. In the end, this dish turned out better than I expected it too. Goes to show what you can do when you make things instead of buying them.
